WATER SLOUBLE GINKGO BILOBA EXTRACT AND MANUFACTURING METHOD THEREOF

The present invention relates to a method for producing a water-soluble ginkgo leaf extract, which comprises the following steps: dissolving cyclodextrin and a ginkgo leaf extract which is an insoluble material in water; generating a precipitate by adjusting pH of the solution to an acid state; including a ginkgo leaf extract in cyclodextrin; and secondly generating and removing a precipitate by cooling and stationing the included solution. According to the present invention, when a water-soluble ginkgo leaf extract is produced by using the method, a production process is simplified. At the same time, the water-soluble ginkgo leaf extract can be stable to heat and pH without loss of flavonol glucoside, can alleviate a bitter taste of a gingko leaf, and does not generate a precipitate in an acid condition.
