METHOD FOR PRODUCING KOJI FERMENTED MILK BEVERAGE

PROBLEM TO BE SOLVED: To provide a new health drink by using koji in cow milk followed by fermenting.SOLUTION: A method for producing koji fermented milk beverage includes: a heating step of heating cow milk; a mixing step of mixing rice malt in a particulate form of a diameter of 3 mm or less with cow milk after the heating step; and a fermentation step of fermenting the mixed liquid obtained in the mixing step. The method for producing the koji fermented milk beverage includes further mixing rice following koji in the mixing step. The koji fermented milk beverage produced by the production method has characteristics of cow milk and rice-made sweet drink, has extremely abundant amino acid, and is expected as a new health drink.
