The present invention relates to a high efficiency food dryer using a vacuum state, which comprises: a case separately formed with a vacuum space for drying a food and an insertion space for storing various facilities, and installed with a door on the front side of the vacuum space; a far infrared ray lamp installed in the vacuum space of the case for supplying a heat source; a vacuum pump installed in the insertion space of the case for making the vacuum space a vacuum state; a temperature sensor installed in the vacuum space of the case for measuring the inner temperature; a vacuum remover installed on one side of the case for removing a vacuum state in the vacuum space; and a control unit installed on one side of the case for controlling various operations and the temperature. According to the present invention, the food dryer is capable of reducing time for drying and producing high-quality dried product and drying at the temperature of 60°C which minimizes destruction of nutrients, as well as drying at low temperatures with a sterilization process of a dried product by applying a far infrared ray lamp to a heat source for drying a food.
