Provided is a food that contains a soybean flour and an edible fat or oil. More specifically, the aforesaid food is characterized in that the edible fat or oil contains 50 mass% or greater of a triglyceride having medium-chain fatty acids relative to the mass of the edible fat or oil. In the aforesaid food, in particular, the beany smell, green smell, astringency, greasy feeling (oily feeling), oily smell, etc., are reduced, a good taste is obtained, and the feeling on the tongue, texture, milky feeling, meltability in the mouth, smoothness and richness are improved. A method for manufacturing the food is also provided. Also provided is a method for improving the soybean flour-derived flavor of a food that contains a soybean flour and an edible fat or oil. |
