The present invention relates to a novel Aspergillus terreus strain, a manufacturing method of Aspergillus terreus rice using the same and a producing method of monacolin K. The method does not produce mycotoxin Citrinin which is a problem in fermentation processes of Monascus sp. and Aspergillus sp., improves production ability of monacolin K more than 10 times than that of an existing Monascus sp. strain, and can be applied to various food materials due to no red pigment from red-yeast rice. |
