A novel cutter that can be used in families, canteens, restaurants, and other scenarios. The cutter is a novel protection cutter formed by multiple blade sets (3) and a fixing rack (2) supporting the use of the blade sets, and comprises multiple blades for purposes of slicing, shredding, and dicing. By using an inverted-T-shaped and an undercut-shaped slide rails and through combination of a nut manner and a bolt manner, the blade sets (3) and the rack (2) can implement reliable connection and achieve the function of freely changing the blade sets (3). Through the function, the purposes of slicing, shredding, and dicing can be achieved according to the thickness of the materials to be cut. A protection plate works in coordination with the elastic blades or "thread" to protect the blades or the "thread" serving as the blade and protect the chopping board, thereby greatly prolonging their service life.
