The present invention relates to a sausage containing red yeast rice and a method for manufacturing the same. According to the present invention, red yeast is prepared, the red yeast rice is produced by using the prepared red yeast, and the sausage containing red yeast rice is manufactured by using the red yeast rice. As a result of tests on nutrients, color, moisture content for each storage period, physical properties, and palatability of the sausage, the sausage can have an increased value in aspects of dietetics, functions, quality and preference by enhancing preference, taste, color, and physical properties. |
