PROBLEM TO BE SOLVED: To provide a powdery emulsified fat to be blended with heat-sterilized beverages, in particular, retort-sterilized or UHT-sterilized beverages, which allows aggregates formed of separated and aggregated milk components or fat generated during a long-term storage of the beverages blended with the powdery emulsified fat to have good redispersibility.SOLUTION: The powdery emulsified fat for heat-sterilized beverages is obtained by drying an oil-in-water type emulsion of a solution which contains a fat and a sorbitan fatty acid ester. |
