The use is described of chestnut tannin extract (Castanea sativa Mill.) and/or its fractions, alone and/or mixed with other polyphenols, as antioxidant, antimicrobial additive and for reducing nitrosamines and mycotoxins in raw food materials and food products for human beings and animals.
