摘要 FIELD: food industry.SUBSTANCE: invention relates to meat industry, in particular to manufacture of chopped semi-products of animal origin raw materials, and may be used both in meat-processing industry and at catering enterprises. Small cattle paunch is preliminarily cleaned, washed, milled, soaked in a protein product and in an enzyme preparation. The protein product is represented by milk whey, the ratio of paunch to milk whey being 1:4. The enzyme preparation is represented by Rhenninomiin P10Kh in an amount of 0.06% of the raw material weight.Simultaneously one performs paunch mechanical treatment by way of tumbling in the tumbler during 5-6 hours in the following mode: 1 hour - rotation, 0.5 hour - maintenance, the rotation rate W being 4.3 radian per second; then one performs intensive milling of particles in the cutter during 4-6 minutes at a rate of 8000 rpm for secondary structure forming provision.EFFECT: invention ensures enhancement of nutritional, nutritive and functional-and-technological properties of paunch by-product.2 tbl
