The present invention relates to a preparation method of Cornus officinalis radish water kimchi and, specifically, to a radish water kimchi made of infusing Cornus officinalis in kimchi juice of radish water kimchi, wherein the method can be effectively used to prepare radish water kimchi with excellent nutritional, functional and sensory preference because of containing a physiologically active ingredient and a nutrition of Cornus officinalis as well as offering a light and fresh sour taste and visually stimulating a palate.
