The present invention relates to an extraction device (1) for use in beverage preparation machines, for example espresso type coffee, tea and the like, by extraction from individual portion containers (2) of at least one respective aromatic substance. Said extraction device (1) is characterised by a structure having two adjacent chamber parts (11, 12) with telescopic interaction, designed to be actuated by more user-friendly actuation motions, including the perception of the end position of each motion, with the result of an ergonomic usage and a particularly simple and compact design.
