The present application is directed to materials and methods for producing extracts from a plant of the Moringaceae family having high concentrations of moringa isothiocyanates.

1. A method of activating myrosinase present in a plant of the Moringaceae family comprising incubating injured seeds of the plant in a solution comprising water at a temperature of less than 100° C. for a time sufficient to activate myrosinase present in the plant.
