PROBLEM TO BE SOLVED: To provide an oil-in-water drop type emulsified product preventing adhesion of cooked rice, improving removability from a pot, coming loose or moldability, without damaging the texture such as stickiness or hardness and improving the taste by adding when cooking rice and dispersing the oil uniformly over the rice.SOLUTION: There is provided an oil-in-water drop type emulsified product consisting of a water phase part containing a rice-derived raw material containing 20 wt.% or more of rice-derived protein in terms of a solid component, water and acid and an oil phase part containing edible oil and emulsified as an oil-in-water drop type by the rice-derived raw material. |
