The present invention relates to a method for increasing the content of paradols in a substrate by culturing specific microorganisms in the substrate containing shogaols and the substrate prepared by using the method to have the increased paradol content. The method can be used to convert the shogaols in the substrate to paradols effectively and at a low cost in a short time. The increased paradols can be used as a material for ameliorating encephalopathy, which has various purposes such as cognitive function improvement or the like.
