A method of producing an enzyme-modified soybean product comprising treating an aqueous slurry of soybean flakes with a microbial proteolytic enzyme having specificity for arginine and/or lysine, wherein the enzyme-modified soybean product has a residual trypsin inhibitor activity which is at least 30% lower than a soybean product produced by the same method without addition of the microbial proteolytic enzyme and wherein the microbial proteolytic enzyme has an identity of at least 95% to amino acids 25-248 of SEQ ID NO: 1. |
