The present invention refers to a method and device for the manufacture of fruit sauces, incorporating a close and continuous cycle, which is based on a cooking and cooling system in a short time, reducing the manufacturing time and improving the characteristics of manufacturing quality and nutrimental quality. The device and method consists in a production line of fruit sauces, which includes a pulper, conventional mixers, a continuous cooking system and flow-through coolers, which represent the main characteristic. |
