摘要 <p>The present invention relates to rice cakes prepared by using lotus roots (Nelumbo nucifera) to be used to cook rice cake soup and a preparation method thereof. The rice cakes are prepared by mixing the lotus roots having a variety of nutrients and rich dietary fibers to enable a consumer to consume the lotus roots containing rich nutrients. The rice cakes do not easily harden at the room temperature to be easily cooked and consumed in a health manner on the spot. According to the preparation method, the preparation method includes the steps of: precipitating washed rice, removing the moisture from the rice, and grinding the rice for the first time to prepare rice powder; preparing lotus root powder by cutting washed lotus roots in 1.5-3 mm, drying the cut lotus roots, and grinding the lotus roots for the first time; mixing 95 wt% of the rice powder and 4 wt% of the lotus root powder ground for the first time; aging the mixture powder for the first time; grinding 50-60 mesh of the aged mixture powder for the second time; aging the twice-ground mixture powder for the second time; steaming the mixture powder aged for the second time; cooling the steamed mixture powder, adding the steamed powder in a mold, and shaping the cylindrical rice cakes; placing and naturally cooling the cylindrical rice cakes on a wicker tray to age the cylindrical rice cakes; and cutting and packaging the aged rice cake.</p>
