PROBLEM TO BE SOLVED: To solve the problems that energy consumption is large and a prolonged period is required, in an infiltration method of a processing object (including a production method of an impregnation food product).SOLUTION: There is provided an infiltration method for infiltrating infiltration liquid into a processing object derived from an organism. The processing object is subjected to instantaneous decompression, to thereby change the fine structure of the processing object. Then, the processing object is brought into contact with the infiltration liquid, to thereby infiltrate the infiltration liquid into the processing object. In the instantaneous decompression, the pressure is lowered from the atmospheric pressure to a value of 0.3 kPA or higher and 40.0 kPa or lower, and a time required for reaching the low pressure value from the atmospheric pressure is in the range of 0.05-1.0 second.
