<p>PROBLEM TO BE SOLVED: To provide a manufacturing method of a tea extract with rich flavor inherent to tea, with a reduced astringent taste, preventing reduction in the flavor.SOLUTION: Tea leaves are subjected to extraction treatment with an aqueous solution of an enzyme having a tannin decomposing activity in the presence of adsorbent, so that a tea extract with rich flavor inherent to tea, with a reduced astringent taste derived from catechin and the like, can be obtained.</p> |
