PROBLEM TO BE SOLVED: To provide a novel production method for hydroxystilbene which is piceatannol having a variety of bioactivities such as an antioxidant activity and an anticancer activity.SOLUTION: This invention relates to a method that makes 4-hydroxyphenylacetate, 3-hydroxylase (HPAH) act on a compound represented by a general formula (I) where R1-R3 are -H, -OH or -OR and R is a group independently selected from a C1-6 alkyl group or glycosyl group. |
