FIELD: food industry.SUBSTANCE: invention relates to food industry. The method involves preparation of liquid omelette mass that is packed under pressure into a polymer container made of food grade coextrusion film, tightly closured and conditioned until prepared omelette consistency with simultaneous pasteurisation in a food cooling boiler at 70-90°C during 30-40 min with further cooling to 2-6°C.EFFECT: invention allows to produce an omelette ready for consumption requiring no secondary thermal treatment and having an extended storage life.4 cl, 5 tbl, 2 ex |
