<p><P>PROBLEM TO BE SOLVED: To enable dough production in a simple method while suppressing the aging of the resulting moist and rice-cake-like baked confectionery using rice flour. <P>SOLUTION: In producing baked confectionery using rice flour, the baked confectionery imparted with rice-cake-like palate feeling of the raw material rice flour and with suppressed palate feeling alteration after baked, is obtained by using 50-100 pts.mass of an enzyme-containing oil-and-fat composition based on 100 pts.mass of grain flour and by adjusting the dough specific gravity to >0.80 through an all-in-mix production method or sugar batter production method. <P>COPYRIGHT: (C)2012,JPO&INPIT</p> |
