摘要 <p>The present invention relates to a continuous separation process method of egg white proteins. Lysozyme, ovomucin, ovotransferrin and ovoalbumin are sequentially separated from an egg white and thus, a high-yield and high-purity separation is possible. First and foremost, lysozyme is primarily separated from an egg white, and in the following step, ovomucin is separated, and thereafter, ovoalbumin and ovotransferrin are separated in the method. In the case of lysozym, a yield of 89% is shown, and in the case of ovoalbumin and ovomucin, a yield of 97 to 99% and in the case of ovotransferrin, a yield of 83%. In addition, lysozyme shows a purity of 95% or more, ovoalbumin and ovotransferrin show a purity of 85% or more and ovomucin shows a purity of 85%, and a high-purity separation is enabled. Accordingly, it is possible to mass produce four white egg proteins beneficial to our body; possible to create added values in the poultry industry; and possible to apply to foods, pharmaceutical products and cosmetic products, thereby producing a variety of products.</p>
