摘要 PROBLEM TO BE SOLVED: To provide a container for manufacturing Natto (fermented soybeans) having superior balance between air tightness and air permeability appropriate for each step of filling, fermenting, and heating, and a method of manufacturing Natto having superior preserving properties using the container.SOLUTION: The container for manufacturing Natto includes a container body 12 having a recessed part formed therein for storing Natto, a lid body 13 formed to cover the recessed part of the container body 12 and having no air hole, and a seal part 16 for adhering a rectangular frame shaped flange 15 formed on the top face of the container body 12 to the lid body. A projected part 14 for fitting with the container body 12 is formed on the inside of the lid body 13. The seal part 16 is adjusted to maintain the balance between air tightness and air permeability of the lid body 13 and the container body 12.
