The present invention aims to provide lecithin or a lecithin preparation having resistance to discoloration by heating without significantly changing composition of phospholipid, constituting lecithin, and an oligosaccharide content, and to provide a method producing the same lecithin or the same lecithin preparation. The lecithin or the lecithin preparation is obtained by making the lecithin come in contact with an absorbent and then removing the absorbent and has the oligosaccharide content is 50% or greater of an oligosaccharide content in lecithin before coming in contact with the absorbent.
