PROBLEM TO BE SOLVED: To provide a new method for reducing the Cucurbitaceae odor of a fruit juice or a crushed pulp product of Cucurbitaceae fruit, and a new method for manufacturing a processed product of Cucurbitaceae fruit.SOLUTION: The method for reducing the Cucurbitaceae odor of a fruit juice or a crushed pulp product of Cucurbitaceae fruit, and the method for manufacturing a processed product of Cucurbitaceae fruit include the steps of: obtaining a mixture which contains a fruit juice or a crushed pulp product of Cucurbitaceae fruit and a neutral amino acid; and heat-treating the mixture. |
