PROBLEM TO BE SOLVED: To provide: vinegar-containing rice having maintaining/holding action of acid taste, and production method thereof; a maintaining/holding action method of acid taste related to vinegar-containing rice; and seasoning vinegar having maintaining/holding action of acid taste related to vinegar-containing rice.SOLUTION: Vinegar-containing rice to be provided includes a cold-water-soluble starch decomposition product at the ratio of 0.05-1 pt. mass per 1 pt. mass acid contained in the vinegar-containing rice.
