[Problem] To provide a manufacturing method by which a sugar having fructose added thereto can be manufactured simply and efficiently using β-fructofuranosidase. [Solution] A method for manufacturing a sugar having fructose added thereto, said method having a step in which a receptor substrate and a sugar including a fructose residue at the terminal are brought into contact with: Escherichia coli in which an anchor protein for expression on a cell surface and β-fructofuranosidase have been expressed as one polypeptide; and the polypeptide obtained from a composition including dead cells of the Escherichia coli in which the expression has occurred or obtained from the Escherichia coli in which the expression has occurred, said polypeptide including the amino acid sequence of β-fructofuranosidase.
