摘要 The invention relates to food industry, in particular, to a method of fat and oils interesterification. The technical result provides a method of producing a high-quality fat based on goat fat and safflower oil in different ratios using enzyme Lipozyme TL IM (lipase from Thermomyces lanuginosus fingi) The method is also useful for preparing a fat base for margarine products. Goat fat and safflower oil in ratios 90:10, 80:20, 70:30, 60:40, 50:50 were used for the process of enzymatic interesterification. The reaction of the enzymatic interesterification was carried out using a Wurtz flask with stirring rate 1500 rpm of fat mixture at 60°C for 6 hours. The amount of added biocatalyst was 4-6% of the total mass. Combined fats produced by the method of the enzymatic interesterification by organoleptic and physicochemical characteristics correspond to the requirements of GOST 28414-89 "Fats for cookery, confectionary and bakery industry". The amount of trans-isomers in combined fats based on goat fat and safflower oil is 9.31%, which corresponds to natural content of trans-isomers in natural fats. Due to comparatively low technical expenditures the method is also well-applicable in a commercial scale.
