According to the present invention, disclosed is a method of producing a low sugar strawberry jam, comprising a) an ingredient trimming step of washing strawberries, removing water and the top part from the same and squeezing lemon; b) putting strawberries with 11-12 wt% of sugar against strawberry in the pot and boiling the same in a fire with moderate intensity; c) putting the same with 11-12 wt% of sugar against strawberry and boiling the same with 0.2 wt% of added salt for weight of strawberry in a fire with strong intensity; d) putting a mixture of 3.7-3.8 wt% of sugar and 0.3 wt% of pectin against strawberries in the pot and boiling the same while stirring; and e) putting 3.7-3.8 wt% of lemon for weight of strawberries and 6.6-6.7 wt% of starch syrup against strawberries in the pot and boiling the same at a fire with moderate intensity to have a predetermined brix sugar level. |
