METHOD OF PREPARING SOYA MILK DRINK USING COWPEA

The present invention relates to a method of manufacturing a soya milk drink using cowpeas which includes a step of roasting cowpeas; a step of putting the roasted cowpeas into water and extracting an extract through heating; and a step of filtering the extract. A soya milk drink manufactured by the manufacturing method in the present invention contains large quantity of phenolic compound and high DPPH radical scavenging ability to have excellent antioxidative activity and prevent aging. Moreover, the soya milk drink has high content of essential amino acids such as valine, theonin, and ricin, thereby, showing excellent health promotion.
