<p>The present invention relates to a smart pork cutlet drying device. The present invention can solve the problems such as the center temperature of the pork cutlets from a conventional frying apparatus rising above 100°C, a large amount of oils remaining on the fried skin when the pork cutlets are cooled at a low temperature, and the large amount of the grease degrading the texture of the fried skin of the pork cutlets when the pork cutlets are fried again after being frozen. The present invention includes: a metal mesh conveyor rail (100); and a quick pork cutlet oil drying device (200). Accordingly, the present invention can covey the pork cutlets freshly out of the frying apparatus to the quick pork cutlet oil drying device (200), let the oil from the pork cutlets fall down to a lower end, emit the infrared rays to the surface of the port cutlets for the first time from an upper end, and blows a hot air curtain along the surface of the pork cutlets for the second time to evaporate the oils remaining in the port cutlets. Accordingly, the present invention can vaporize the residual oil on the pork cutlets in 10-30 seconds, thereby reducing oil from the pork cutlets by 60%.
