<p>The present invention relates to a sweet wormwood (Artemisia annua) cookie preparation method. The sweet wormwood cookie preparation method includes the steps of mixing sugar secondarily with a cookie dough including sweet wormwood powder and aging the mixture at low temperatures to moderately decompose the proteins and carbohydrates which are the main components of the sweet wormwood powder and butter by the microbial reaction thereof. Accordingly, the present invention can provide the rich flavor and fragrance unique to the sweet wormwood and the soft texture of the cookies by using the protein decomposition process. According to a preferred embodiment of the present invention, the sweet wormwood cookie preparation method includes: a first step of melting 245 to 255 parts by weight of butter at room temperature; a second step of adding a mixture including 70 to 90 parts by weight of sugar and 3 to 5 parts by weight of salt to the butter melted in the first step for 3 to 5 times and whipping the final mixture; a third step of adding a mixture including 90 to 110 parts by weight of eggs and 18 to 22 parts by weight of milk to the whipped mixture in the second step for 3 to 5 times and whipping the final mixture; a fourth step of sifting a mixture including 380 to 420 parts by weight of soft flour, 6 to 10 parts by weight of sweet wormwood powder, 1.5 to 3 parts by weight of baking powder, and 45 to 55 parts by weight of walnut powder and mixing the sifted mixture with the mixture whipped in the third step to prepare the cookie dough; a fifth step of adding 70 to 90 parts by weight of sugar to the cookie dough prepared in the fourth step; a sixth step of aging the cookie dough mixed with sugar in the fifth step at 2-6°C for 2 to 3 days; and a seventh step of dividing and shaping the cookie dough aged at low temperatures in the sixth step to bake cookies in an oven.</p> |
