The present invention relates to a granular amino acid seasoning composition with an acidic amino acid and a basic amino acid whose particle size is between 40 and 1000 μm and distribution is between 65 and 99%, and a manufacturing method thereof. In addition, the present invention relates to a method for reducing and solidifying moisture retention of composite amino acid seasoning. The composition of the present invention is made by mixing the acidic amino acid with a basic amino acid, controlling size and distribution of the particle in a certain range, thereby improving moisture retention and preventing moisture from being solidified.
