The present invention relates to a manufacturing method of steamed and dried sweet potato with inhibited sugar crystal formation and steamed and dried sweet potato with inhibited sugar crystal formation manufactured thereby. A method of the present invention can significantly inhibit sugar crystal formed on the surface of sweet potato after storing for a long period of time in comparison with steamed and dried sweet potato manufactured by a conventional method, by performing a process of heat treatment at certain temperatures and time after wrapping steamed and dried sweet potato in a wrapping material which can effectively prevent moisture and oxygen. Steamed and dried sweet potato manufactured by a method of the present invention can inhibit sugar crystal formation, and can inhibit generation and progress of a glaucous appearance which is misled into fungus on the surface of sweet potato, thus solving the problem of giving a disgusting feeling to adolescent or adult as food. |
