摘要 <P>PROBLEM TO BE SOLVED: To provide rice flour noodles and a method for producing the rice flour noodles that have easy noodle making properties and a texture peculiar to rice flour noodles different from the texture of wheat flour noodles, are tasty and shiny and go down smoothly. <P>SOLUTION: The rice flour noodles are obtained by making noodles out of a mixture containing rice flour, or rice flour and pregelatinized rice flour, salt-ground fish meat, salt and water. The salt-ground fish meat is added at 5-30 pts.wt. based on 100 pts.wt. of rice flour or of rice flour and pregelatinized rice flour. It is preferable that the mixture contains rice flour and pregelatinized rice flour and that the pregelatinized rice flour is added at 5-15 wt.% to the rice flour. <P>COPYRIGHT: (C)2013,JPO&INPIT
