PROBLEM TO BE SOLVED: To provide an emulsified dressing excellent in emulsion stability and flavor, without using eggs, soybeans, an emulsifier, and thickner as raw materials.SOLUTION: The emulsified dressing includes: a water phase part including a rice-derived raw material which contains rice-derived protein extracted from rice in an amount of 20 wt.% or more in terms of solid content; a water phase part including vinegar; and an oil phase part including edible oil. Due to the rice-derived raw material, an oil-in-water type emulsion is made. |
