The present invention relates to fruit syrup having good texture and a preparation method thereof. The present invention treats fruits or vegetables with an enzyme treatment solution including pectinase and calcium. The present invention comprises: a foreign substance selection step for selecting foreign substances from fruits or vegetables; an enzyme treatment step for spraying an enzyme treatment solution including pectinase and calcium; an enzyme reaction step for reacting the enzyme-treated fruits or the enzyme-treated vegetables; and a syrup preparation step.
