In the present invention, provided is a roasted mussel in one rapidly frozen shell, which is made by roasting whole shell of byssus-free cultured mussels at high temperatures for a short time with use an electric roasting machine; removing one shell of the mussel; rapidly freezing the same; and glazing the same, thereby preventing moisture loss and having good appearance and components.
