PROBLEM TO BE SOLVED: To provide pharmaceutical formulations of orally administered proteins which can be stabilized from oxidative degradation and inactivation in the stomach and gastrointestinal (GI) tract.SOLUTION: The invention provides a solid pharmaceutical formulation of a barley endoprotease B-2 suitable for oral administration with a unit dosage form, or a recombinant form or modified form of barley endoprotease B-2. The solid pharmaceutical formulation is a capsule form; a powder, sprinkle, or particle in the capsule or a sachet; or a tablet form, comprising about 2 to 50 mg of sodium metabisulfite and 50-2000 mg of the EPB2.
