摘要 <p><P>PROBLEM TO BE SOLVED: To provide a mix flour for producing confectionery using meringue without a separate treatment of the meringue, to provide the confectionery using the same, and to provide a method for producing the same. <P>SOLUTION: There is provided the mix flour for the meringue confectionery including 180-450 pts.mass of sugar and 1-7 pts.mass of a leavening agent based on 100 pts.mass of a raw material comprising 70-30 pts.mass of a crosslinked starch and 30-70 pts.mass of albumen powder. Furthermore, there is provided the method for producing the meringue confectionery including adding 140-220 pts.mass of water and 35-90 pts.mass of a foaming oil and fat to 100 pts.mass of the mix flour for the meringue confectionery, carrying out mixing until the specific gravity amounts to 0.5-0.7, preparing dough, and baking the dough at 180-250°C for 10-20 min. <P>COPYRIGHT: (C)2013,JPO&INPIT</p>
