The present invention relates to an extraction of fresh garlic with high content of S-allyl-cysteine (SAC), a manufacturing method thereof and a beverage including the extraction and, more specifically, an extraction of fresh garlic with high content of S-allyl-cysteine, which is made by decomposing fresh garlic with use of enzyme and accordingly removing smells of garlic, a manufacturing method thereof and a beverage including the same.
