The present invention relates to a food additive seasoning powder using fermented glutinous rice. The food additive seasoning powder is produced by washing and fermenting 99 wt% of glutinous rice at 25 to 30°C for ten days, washing and fermenting 1 wt% of a soybean compared with the glutinous rice at 25 to 30°C for ten days, mixing the 99 wt% of the fermented glutinous rice and the 1 wt% of the fermented soybean, washing the glutinous rice and the soybean for an hour in the running water, perfectly dehydrating the same, inserting the glutinous rice and the soybean in a grinder, carrying out first and second ultrafine grindings, mixing the same with a mixer to make a glutinous rice powder and a soybean powder to be perfectly mixed, steaming the mixture, extruding the glutinous rice powder and the soybean powder in an extruder, drying the powders, putting and grinding the powders in the grinder for the third times, measuring the powders for a certain amount, and packing and commercializing the same. If the extruded and dried glutinous rice and soybean powders like noodles are used as a seasoning powder for Kimchi before or after inserting the same into the grinder of the last step, the present invention has two categories: one is adding glutamine acid, amino acid, and dextrin which delay rancidity promoting a sour taste of Kimchi; and the other is not adding the glutamine acid, the amino acid, and the dextrin of an amorphous powder. |
