摘要 PROBLEM TO BE SOLVED: To provide a method for producing a food material by mixing grain flour or starch with fat, making lipase react in a pseudo powdery state with a prescribed moisture content and oil content to the grain flour or the starch, and using the whole reactant as the food material, and the food material.SOLUTION: A method for producing a food material includes: mixing grain flour or starch with fat; and hydrolyzing the oil by making lipase react in a pseudo powdery state with a moisture content of 20-50% and an oil content of 5-50% to the grain flour or the starch, or a pseudo powdery state with an organic acid content of 0-20%, and a condition of heating treatment at 150-300°C when using heating treatment. Alternately, the method includes producing the food material decreased in an acid value (AV) through addition of an alkali material. A processed food such as baked product (bread, cake and cookie), a fishery milling product and a noodle product comprises using the food material. Consequently, the food material having emulsification ability and decreased in an acid number, and the processed food using the food material are each provided.
