Provided is a method of preparing fruit jam containing fermented Stevia extract, comprising the steps of: (a) mixing, with respect to 100 parts by weight of fruit, which includes strawberry and others, with 50-200 parts by weight of Steviarebaudiana extract and fermenting the mixture to prepare a fermented material; (b) mixing, with respect to 100 parts by weight of the fermented material, with 10-200 parts by weight of a sugar source selected from the group containing sugar, honey, oligosaccharide, and grain syrup, and heating the mixture to prepare strawberry jam. A method of preparing fruit jam containing fermented Stevia extract according to the present invention comprises a step of mixing and fermenting Stevia extract, fruit, and a selective sugar source, such as grain syrup, so that the fruit jam can have beneficial health effects for patients suffering from diabetes and obesity, and superior nutritional values, as well as excellent flavor and ease of storage compared to typical fruit jam or fruit jam containing fermented Stevia extract prepared by conventional methods. |
