PROBLEM TO BE SOLVED: To provide an apparatus and method for manufacturing black garlic, capable of manufacturing a black garlic with a high content of polyphenol, requiring a short term for maturation.SOLUTION: An enclosure 2 having an internal space in which raw garlic can be hermetically accommodated is disposed in a processing chamber 15. The enclosure 2 made of metal having a high thermal conductivity such as aluminum or stainless steel includes a rectangular box-shaped body 21 with an upper opening and a lid member 22 which covers the opening of the body 21. The internal space of the enclosure 2 is hermetically sealed with the lid member 22, so that the internal space can maintain moisture, with high thermal efficiency. Fired wood ceramic tiles 3 in a thin plate form are attached to the whole inner peripheral surface of the body 21 and the lid member 22. The temperature in the internal space of the enclosure 2 is kept at 70 to 80°C for about 4 hours in a day, and varied between 70 to 80°C and normal temperature of 0 to 25°C in other time. Along with the change in temperature in the internal space of the enclosure 2, the humidity varies between 80% and 3%. |
