PROBLEM TO BE SOLVED: To provide a sheet processing method and sheet processing system capable of reducing the cost for an inspection device.SOLUTION: The sheet processing method includes: a first process of applying first processing such as printing, lamination, or slit to a sheet S extending like a band; an inspection process of performing inspection for detecting a defect of the sheet S having undergone the first processing; and a wind-up process of winding up the sheet S having undergone the inspection to provide a roll-like slitted roll 47. The inspection process includes an inspection information output process of outputting inspection information including positional information indicating the position of the detected defect in order to use the inspection information in a cutting process for cutting the sheet pulled out of the slitted roll 47.
