PROBLEM TO BE SOLVED: To provide a method for improving a fish meat processed food or raw material thereof (e.g. improvement in flavor component), and for improving the strength of a fish meat processed food.SOLUTION: The flavor components of a fish meat processed food or raw material thereof can be improved by using tyrosinase. For example, the flavor components causing an off-flavor in a fish meat processed food or raw material thereof can be eliminated and/or reduced by using tyrosinase. The strength of a fish meat processed food can be also improved by using tyrosinase. Further, a composition for improving a fish meat processed food or raw material thereof is provided. |
