A crystallized maltitol powder including a maltitol content greater than 99.5% by weight, characterized by a particle-size distribution by volume, determined by laser granulometry, having less than 20% particles less than 200 μm in size, less than 6% particles less than 100 μm in size, less than 2% particles less than 40 μm in size and a pour value less than or equal to 10 seconds, an aerated density greater than 0.85 g/ml, a compacted density greater than 0.97 g/ml, and a compressibility of less than 17%, and to its use in the pharmaceuticals and above all foods sectors, in particular in the formulation of chocolates or table sweeteners. |

1. A process of preparing a crystallized maltitol powder comprising:
a) feeding a zig-zag separator having a channel composed of several stages with a 120° slope with a crystallized maltitol powder having, for an arithmetic mean diameter comprised between 180 and 230 μm, a particle-size distribution by volume of: more than 20% particles of less than 200 μm in size, more than 7% particles of less than 100 μm in size, and more than 2% particles of less than 40 μm in size; b) controlling the flow rate of primary air so as to recover a fraction of crystallized maltitol powder comprising particles less than 200 μm and having a particle-size distribution by volume of: less than 20% particles of less than 200 μm in size, less than 6% particles of less than 100 μm in size, and less than 2% particles of less than 40 μm in size. |
